
Glazed Salmon Bowl

Ingredients
400g skinless salmon
1 bag coleslaw mix or veg of choice
1/2 cucumber
1/3 cup soy sauce
2 TBS honey
1 clove garlic
1 tsp ginger
2 cups rice cooked
2 TBS oil of choice
Instructions

Prepare salmon by slicing into ~3cm wide slices

Finely chop garlic and ginger. Mix well with soy sauce and honey until well combined to make the marinade.

Place salmon in the marinade and let sit covered in refrigerator for 20 minutes.

Heat a large pan on the stove on high heat. Add 2TBS of oil of choice and heat. Sear salmon until golden brown. Set aside.

Using the same pan, pour remaining marinade and simmer on low heat until thickened.

Assemble bowl with rice on the bottom, veg, sliced cucumber and cucumber. Add remaining glaze on top and enjoy!
