
Shakshouka Eggs

Ingredients

2 tsp olive oil

1 brown onion

1 tsp garlic

1 can diced tomato
-
1 can kidney beans

4 eggs

1/4 cup or 20g Grated mozzarella (can be substituted for any cheese)
Spices

1 tsp salt

1/2 tsp black pepper

1 tsp chilli powder
-
1 tsp paprika

1/2 tsp cumin
Hot tip: add any vegetables you have in the fridge for extra flavour and nutrients!
Instructions

Heat the olive oil in a pan on medium heat

Add in the onion and garlic, and sauté for 5 minutes

Add in the diced tomato, kidney beans, and spices, then let them simmer for 10 minutes

With a spoon, make 4 small dents in the tomato sauce, then crack the an egg in each dent
-
Top the eggs with cheese, then cover the pan and let it cook for 7 minutes, until the eggs are cooked to the preferred liking
