Teriyaki Tofu Bowl

1 cup cooked rice

1 broccoli head

1 carrot

1/2 cucumber

1 firm block tofu

1 tbsp oil

Marinade ingredients:

  • 1/4 cup light soy sauce

  • 2 tsp sesame oil

  • 1 tsp onion powder

  • 1 tsp garlic powder

  • 1 tbsp cornstarch

  • 2 tbsp water

Sesame seeds to top

Sliced spring onion (optional)


  • Cut tofu into cubes. Add all marinade ingredients except cornflour and marinate tofu for 30 minutes. Heat oil in a fry pan over medium heat. Add tofu to the pan, saving the marinade and cook for 2-3 minutes each side, until crispy

  • While the tofu is cooking, whisk the cornstarch into the remaining marinade. Once the tofu is cooked, turn the heat off and pour marinade over the tofu. Allow to sit.

  • Add water to a pot. Once boiling, add rice. Simmer for about 15 mins. Cut broccoli and add to rice when there is 4 mins left.

  • Dice carrot, cucumber and spring onion

  • Add rice to the bottom of a bowl. Add vegetables and tofu, and top with spring onion and sesame seeds

  • Enjoy!
