Tomato & Spinach Pasta
Serves up to 4!

Boil a large pot of water and add pasta, cook until tender (7-10 mins), drain pasta.
Prepare the sauce, add diced onion, minced garlic and olive oil to skillet. sauté until onions are translucent
Add diced tomatoes, herbs and stir to combine. Add tomato paste and 1/2 cup water and stir until mixed
Turn the heat down to low, cut in cream cheese and whisk till sauce is creamy. Add parmesan and stir until melted
Add fresh spinach and stir until wilted (2-3 mins), add pasta and stir to combine. Serve warm.

Tip: You can make the same sauce and pour over a chicken breast and mashed potato, or store it in a jar in the fridge or freezer so that you have homemade pasta sauce ready to go when you are!
